- 2 lbs hamburger meat
- 2 eggs
- 1 can Rotel tomatoes
- 1/2 cup water
- 1 cup crushed pork rinds
- Worcestershire sauce, to taste
- Ground black pepper, to taste
- Garlic powder, to taste
- 1/4 cup brown sugar
- 2-3 squirts of mustard
- 1/3 cup ketchup
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine hamburger meat, eggs, Rotel tomatoes, water, crushed pork rinds, a few dashes of Worcestershire sauce, pepper, and garlic powder. Mix well until all ingredients are evenly distributed.
- Line a shallow baking dish with aluminum foil.
- Shape the meat mixture into a loaf and place it in the prepared dish.
- In a small bowl, mix together brown sugar, mustard, and ketchup. Spread this mixture evenly over the top of the meatloaf.
- Bake in the preheated oven for 1 hour, or until the meatloaf is cooked through and the topping is caramelized.
