Description

Currently we have vitests and cypress tests and we would like to just manage one testing framework. This ticket is to convert all vitests into cypress tests, clean out any unneeded vitest stuff, convert code coverage to cypress, and update the CI workflows

cypress component testing is not working properly with nuxt 3 yet so we need vitest still
