dataproc serverless information and dataproc_batch examples in the existing files

Refer to dbt-labs/dbt-bigquery#578

A possible reason that we don't mention dataproc_batch in very many places is that:
the dataproc_batch config was originally added in dbt-labs/dbt-bigquery#578, but never got queued up for the documentation team to work on.
