On the project documentation

So, having had our docs switched over to Sphinx + Furo I'm pretty happy that this is a decent tack for us.

Some other thoughts here...

• I'd be perfectly happy at this point for us to switch our docs over to .rst. They'll render more neatly in the GitHub interface at that point, and if we're going with Sphinx, then I think that'd be preferable to the markdown/rst mix that we've currently got.
• It'll make sense for us to switch over to RTD for hosting, primarily because of the versioning support. I'd suggest we don't act on this one immediately since I'd rather we address the first point, and I'd also like to co-ordinate any switch to RTD together with Eric Holscher, since I want to make sure we get everything neatly set up in a way that'll allow us to integrate our sponsorships into the site.
• I'm totally okay with us taking httpx in the same direction, too.
• And eventually Django REST framework.
