Serves 2
- 1/2 lb lean ground beef
- 2 small bundles of soba noodles
- 2-3 baby bok choy - rinsed and roughly chopped with the bases removed
- ~1 cup broccoli florets
- 3 tbsp soy sauce
- 2 tbsp chili oil
- 2 tsp szechuan pepper
- 4 cloves garlic - minced
- 2 tbsp honey
- 1 green onion - chopped
- 1 block chicken stock (oxo cube)

- Place a large pot of water on high heat. Once boiling, add the chicken stock cube.
- Place a frying pan on high heat and add the ground beef, stirring frequently
- In a small dish, combine the chili oil, soy sauce, szechuan pepper and minced garlic. Stir it together and set aside
- Continue to cook the beef until crispy, then add the honey. Stir together and remove from heat.
- Add the soba noodles, bok choy and broccoli to the boiling water and boil for 4-5 minutes until the noodles are cooked. Drain the water, then return to the pot. Stir in the oil and garlic mixture and distribute between 2 large bowls.
- Garnish with the crispy fried beef, some chopped green onion, a lime wedge for squeezing over and a pinch of sesame seeds.
