DITA to Markdown with YAML front-matter how and how to customise?

I'm having a n00b question about DITA -> Markdown conversion.

1. Where can I learn/lookup what tags get converted to YAML front-matter? I'm comfortable reading x-files once I know where to look ;-)

2. How can I extend the front-matter generation. E.g. I have dita file with

<title>Sample page for <ph comref="../define.dita#define/GummiBaer" /></title>

inside <concept>, <reference>, <task> and <map> elements which I need to translate to:

---
title: 'Sample page for GummiBaer'
---

3. How to extend the transformation to generate specific markdown constructs (supported by flexmark extensions):

• Create include file markdown
• block-styled side content
