Now that trusted publishers are supported on PyPI and by the Jupyter Releaser, we should switch to using them instead of having the bot publish packages to PyPI with its own tokens.

Other projects have progressively switched to trusted publishers, for example JupyterLab in jupyterlab/jupyterlab#15446.
