console is broken on start

When running the container, the console doesn't work on the running entrypoint.sh
In addition, you can't break out of the console if you attach
Using something like https://hub.docker.com/r/roemer/bedrock-server approach all in the Dockerfile seems to be a good way to resolve this I hope but we don't want to create volumes but use the -v to map them from local dirs
