Bug description

With the hoster all-inkl.com as an admin, I don't have the option to change the PHP.ini. Therefore, the hataccess must be changed to change the PHP memory limit. The problem is after each update the file is overwritten and reset to 256 MB. Then the next update will not work. Please change the process so that the file does not have to be overwritten.

On the site https://protostern.de/nextcloud-all-inkl-hosten/ you linked, they also mention the possibility to change the memory_limit=512M via "user.ini" file.
Did you try that, as the user.ini probably won't be touched by a Nextcloud installation/update.
