Describe the bug

There is no documentation on how to scale oCIS.

Also just scaling the oCIS service in an deployment example like the oCIS S3 example does not work because lockups happen.

Expectations

There is an example and docs on how to scale oCIS.

The docker-compose example from #2892 has currently a variable OCIS_SCALE that can be set to 1...100 and scales individual services. So if you set it to 10 it will start 10 instances / containers from every service, that uses this setting. Some don't use that yet, because of eventual lockups that have been described in the EA channel or the open question on how to provide the persistence layer on multiple computing nodes (eg. Docker Swarm).

The oCIS Helm chart also now supports scaling (some services not yet).
