We're missing timestamp w/ timezone, JSON, and probably a bunch of others that can be mapped to datafusion types.

For JSON, datafusion does not currently have a JSON type. The issue apache/datafusion#7845 (comment) is known and looks like this org wants to open-source a JSON type that we might be able to use this month!

We can probably add JSON support now with this:
