Honey Glazed Steak Poppers
Ingredients
------------
1.5 lbs flank steak
8 small whole jalepeno peppers
4 oz Cream Cheese (softened)
1 tsp smoked paprika
2 Tbsp vegetable oil, divided
3 Tbsp soy sauce
1/4 cup chicken broth
3 Tbsp fresh minced garlic
2 Tbsp honey
1 Tbsp sesame seed oil
1 Tbsp apple cider vinegar
1/2 tsp oregano
1 Tbsp cornstarch
1 tsp sea salt
1 tsp fresh ground pepper
Instructions

1. Remove tops of peppers and slice in half lengthwise, keeping halves together
2. Spread softened cream cheese into each of the pepper halves
3. If steak is thicker than 1/2" thick, slice in half to create 2 thinner portions
4. Slice steak into 8 equal strips
5. Close pepper halves back together and wrap with a slice of steak
6. Use a toothpick or skewer to secure steak and set the wrapped peppers aside
7. Mix the broth, honey, vinegar, sesame seed oil, and soy sauce in a bowl
8. Continue mixing and add in the cornstarch, paprika, garlic, oregano, salt, and pepper.
9. Heat 1 Tbsp of vegetable oil in a cast iron skillet (or a regular skillet will work too) over medium heat
10. Place steak wrapped peppers in the pan. Do not crowd them, do two batches if necessary
11. Cook on each side until steak is browned (roughly 2 minutes per side), be careful not to over cook
12. Remove peppers from heat and do the same with the second batch
13. Add 1/2 of the sauce mixture to the bowl and add all 8 peppers to the pan
14. Cook over medium heat for another 2 minutes turning often
15. Plate or place peppers in a serving dish and cover with remaining sauce
** Serve steak poppers as an appetizer or side dish, or serve over rice or pasta to make a main dish.
