Can I see what does the signature of a signed artifact contain?

From https://github.com/sigstore/cosign#sign-a-container-and-store-the-signature-in-the-registry, I read:

	Note that there may be personally identifiable information associated with this signed artifact.
	This may include the email address associated with the account with which you authenticate.
	This information will be used for signing this artifact and will be stored in public transparency logs and cannot be removed later.

Is there a way that I can see/control what data are used for that signature?

e.g. I'd like to use my Github address (133706+stdedos@users.noreply.github.com), instead of my real one
