• Splits example data and necessary data in Makefile and resource directory

@bertsky The script_ocr.sh is renamed to script_ocr_process_dir.sh an does not include the patch from slub/ocrd_manager#35 (comment). I will create a new PR for that to avoid the confusion of mixing the changes.
