It would be helpful for debugging, if it's possible to get the file-sizes before and after optimization of a single file (maybe even a percentage diff)

Good idea, extending ImagePath with methods to get information about optimisation.

optimize_image and optimize_image! now return ImagePath::Optimized and image_optim bin shows percentage and size diff
