Rocksmith should work regarding winedb and people on social media say the same (i.e. here, here, here or here).
So it seem to work with Wine and the major Linux versions and it would be nice to get the game running without the Steam dependency.

PS: In the meantime I tried to build a Docker image for running Rocksmith 2014 Remastered.
