It would be great to get rid of Rust nightly in workspace-optimizer.

The only reason for using unstable is this command line flag: https://github.com/CosmWasm/rust-optimizer/blob/v0.10.6/optimize_workspace.py#L42-L43.

Without --out-dir a clever search in the target dir needs to be done, which is hard to get right.
