technically this is a breaking change, but since chart.defintion(newDef) didn't clone, I figure we could make it consistent

Approving, though I somewhat vaguely recall there being a reason we put that clone in....I know there's still some cloning going on in render as well....

Just be aware there could be some breakage? Perhaps? Perhaps not.

thanks @benstoltz you remember correctly that we use deepmerge to clone stuff in the render. I'd rather not bring that in here if I can avoid it.
