[GraphQL] Fix pruning compatibility issues #18860

## Description Omit the partition tables from the `for_all_tables` list, because we don't want to refer to them directly (outside of the partitioned table they are part of). This fixes an issue with GraphQL's compatibility check which would fail because it tried to read from the partition table directly, and it isn't there on a DB served by an indexer with pruning enabled. ## Test plan Start GraphQL service against a pruned DB.
## Description Read the genesis digest from the `chain_identifier` table, instead of `checkpoints`, because it may not exist there (if the underlying table is pruned). ## Test plan Run the service, and test the following query. ```graphql query { protocolConfig(protocolVersion: 10) { featureFlags { key value } } } ```

The exception is when `--dump-bytecode-as-base64` is specified: In this case, we should resolve the correct addresses for the respective chain (e.g., testnet, mainnet) from the `Move.lock` under automated address management. Two options to fix `sui move build --dump-bytecode-as-base64` to work with automated addresses / by resolving from the `Move.lock`: 1. Require an extra `--chain-id` flag on `sui move build`, which a user must specify along with `--dump-bytecode-as-base64`.
