expand mockCdmFromTables to support any table

hi @ilovemane @edward-burn Ive expanded the scope of this function, we need to properly test, but now it can support any omop standard table. I think it will be very useful for testing. There are some comments how to expand a bit the concept part and there are things that need to be further tested. #63
