feat(event-explorer): bring back project-specific columns #15899

Problem

The HogQL-powered event explorer lost the ability to save columns as project defaults.

Changes

Brings it back, and provides a one-way migration path: enabling the flag migrates your columns (and only on override), removing the flag after an override resets back to the default columns.

It also looks and works exactly the same as before.
