chore: revert upgrade

This reverts the recent upgrade of react native, as it seemed to crash on launch. I tried it to maybe resolve the

I think we need to merge this before we create a new release @berendsliedrecht (if you do the pin changes).

To build the iOS app you can:

• prebuild (not pnpm prebuild, as that sets it to development). You can do pnpm expo prebuild
• open xcode, setup signing
• in the top bar edit the scheme to release (https://developer.apple.com/documentation/xcode/customizing-the-build-schemes-for-a-project)
• Archive (using top bar options).
• After archival, publish to appstoreconnect using archiver window that pops up.

Then you can submit it for review to apple
