[Schema Registry] Add tests for custom and JSON schemas (Azure#24339)

Enables tests for JSON and custom schema formats. Adds a parquet example to be used for the custom schema tests. The diff result is horrible, there is no change in the test suite except for skipping the whitespace unit test for JSON and custom formats.
