could also just switch to using the conda env for the docs. There, when you install the graphviz python package, you get the graphviz binaries as well, and pandoc is included in the default anaconda channel even (probably also in conda-forge)

Installing graphviz fixed the build, the diagrams show up again now. I gues sthat readthedocs changed from an image where it was pre-installed to an image not coming with it
