Add pandas and polars as dependencies in pyproject.toml #10

@MarcoGorelli it looks like the test you added in pandas is being skipped because polars is not installed (and it isn't installed with dateframe-api-compat). Feel free to specify a min version as needed.

ooh, thanks for noticing Matt! Rather than making them required dependencies, I think I just need to make the imports lazy - you should able to use the pandas standard-compliant methods without having polars installed

Yes this would be a nice alternative. And/or for pip specifically could make dataframe_api_compat[pandas, polars] in the future
