Bumping to 1.0.0b1 along with breaking changes

Nice work, really coming along!

I think we'll need to cut a new release of pytest-dbt-adapter (with the changes from dbt-labs/dbt-adapter-tests#28 + dbt-labs/dbt-adapter-tests#29) to get the "spec" tests passing.
