cgofuse: file operations refactor

These are mainly changes that adapt to our internal API changes, as well
as various compliance fixes for FUSE and between `fs.FS`+extensions.

Some modification operations (like `Create`) gained nascent
implementations.

Further development still needed for various TODOS, metadata, etc.
