Description
This PR adds the Evmos metadata to the integration testing setup to avoid having register it in each separate testing scenario. Additionally thanks to @0xstepit and @facs95 adding the IBC coordinator to the setup we can significantly trim down the Stride testing setup
Closes #XXX
