[OTEL] Span operation setting seems off

Issue Description

Operation does not appear to be set correctly on the OTEL transactions

Seeting routes instead of http.server and http method is not being set at all

Reproduction Steps

I actually don't know how specifically to trigger the email service in this example :D

Expected Behavior

Transactions with correct operation and method

Actual Behavior

Route is set for operation and nothing for method
