Fixes #81691 for glTF (was ignoring the option) and AnimationLibrary (was not visible)

Also helps with an issue that we discussed in one of the XR meetings, related to the fact that some models do not import with a root bone. This option can be useful to make the root node of the glTF document into a skeleton bone.
