When updating the room_stats_state table, we try to check for null bytes slipping in to the content for state events. It turns out we had added guest_access as a field to room_stats_state without including it in the null byte check.

Lo and behold, a null byte in a m.room.guest_access event then breaks room_stats_state updates.

This PR adds the check for guest_access, as well as adding an assert if a field is added to room_stats_state without being either explicitly included or not included in the null byte check.

I think this broke in 6e834e9#diff-9fb8e219f876ae3f280bc88c8b9ea972R285.

Oh, I don't even add the value to state_dict in the correct case 🤦‍♂️ Is that what you meant?

Otherwise the assert here was supposed to alert a developer that they've put something in fields that update_room_state didn't know about, but perhaps that's not a necessary thing to raise?

This was not enough info...

I don't think this will do anything since it is missing a boolean statement, e.g. this becomes assert bool("...") which resolves to assert True, which won't do anything.

Since the callers to this are internal I suspect we should raise a ValueError in this case.

This seems like a weird check? It means we can pass in an object and this wouldn't error?

It's also not currently possible in the calling code for is_federatable to be anything other than a bool, even with malicious input. So we can probably just remove this check.

Seems like it would be simpler to iterate over str_columns and then you don't have to check if column_name in str_columns.

The current implementation of iterating the keys, then get with a sentinel doesn't really make sense.

I think it is still necessary, it is there to differentiate an incoming value in fields of None from the key not existing in the incoming dict.

@clokep I've switched up this PR to just fix the bug. I'll submit another PR to refactor things in a nicer way :)
