chore: update naming of env vars and binary (MPC_RECOVERY_* is now MPC_*)

Been meaning to do this for a while. Let me know if this is too big of a change for our upgrade of partner testnet

renames:

• MPC_RECOVERY_* env variables to MPC_*
• mpc-recovery-node/mpc_recovery_node library/binary to mpc-node/mpc_node

This would be nice to have as we do not have the confusion of MPC_RECOVERY anymore. I'll also be getting rid of some these env variables in favor of the contract configurations.
