Make the layout switch/handedness switch button more customizable

Context

Currently, if you set Layout -> Enabled layers to "Letters Only," you can only switch between letters and numbers with the layout switch key (🔄). You cannot switch between handedness.

Describe your suggested feature

I want to be able to switch between different layout settings with the layout switch key instead. Maybe single press can stay switching between numbers and letters, but circle the key to go to a different layout?

Basically, for my specific use case, I want to switch between;

Hm, that's valid. Currently toggling handedness doesn't toggle the margin side, but maybe that would make sense to do too.

Wish I was amidextrous, ahaha. I just sometimes text or take notes while doing other things with my dominant hand.

Also, somewhat related to #137 -- I'm using the "left-handed" option while using my right hand (and vice versa).
