SID visualization updates

Description

• Update docker-compose to use Triton 23.06. This speeds up initial inference run (includes ONNX->TRT conversion) from six minutes to one minute in my test.
• Update README to have git lfs install step before fetching example data. Otherwise, in freshly cloned repo, we'll still have pointers after running fetch_data in the container. This results in JSON parsing errors when running the pipeline.
