.github/workflows/zombie-builder.yml:

• Added a new environment variable POLKADOT_SDK_TAG for custom Polkadot SDK tag input.

housekeeping/docker/kagome-dev/Makefile:

• Updated RUST_VERSION from 1.79.0 to 1.81.0.

zombienet/docker/Makefile:

• Updated RUST_IMAGE from rust:1.80-slim-bookworm to rust:1.81-slim-bookworm.
• Modified get_versions command to include $(POLKADOT_SDK_TAG) in the Polkadot SDK version retrieval.

zombienet/docker/version.py:

• Significant refactor to improve functionality for handling and writing version information.
• Enhanced support for stable Polkadot SDK version tags.

zombienet/docker/version_sem.py:

• Renamed old script to handle semantic versioning for Polkadot repositories, similar to version.py but focused on old releases.

zombienet/docker/zombie_tester.Dockerfile:
