fix: handle utf8 invalid errors

Description

Attempting to insert invalid utf8 characters in Postgres jsonb columns, returns an error.

We already have a mechanism to detect and fix those problems retroactively for \u0000.

In this PR I am adding capability for fixing utf8 invalid runes. using rudder-go-kit sanitizer
