It's too much of a hassle to fix these on all platforms, so they can simply be displayed as text, without a link.
And use stable Rust again for the Check jobs.

Also adds checking the documentation to the CI for all supported targets and adds documentation generation for all the same targets on docs.rs (so we get more doc pages as well).
