Change create wazuh-archives index pattern gif

Description

The documentation of the wazuh-archives index pattern creation is outdated. The OpenSearch menu shown corresponds to another OpenSearch version, because of that the menu items are different and
may confuse the user.

Also, the Stack Management menu item references have been changed to Dashboards Management on the Event Logging section
