fix: Fixes for the nightly test run against Sepolia

This PR makes some fixes to the nightly Sepolia test run

Benchmark results

Metrics with a significant change:

• proof_construction_time_sha256_ms (16): 925 (+30%)
• proof_construction_time_sha256_30_ms (16): 1,378 (-20%)
• avm_simulation_time_ms (Token:assert_minter_and_mint): 40.5 (+30%)
• avm_simulation_time_ms (Token:transfer_public): 35.3 (+44%)

Detailed results

All benchmarks are run on txs on the Benchmarking contract on the repository. Each tx consists of a batch call to create_note and increment_balance, which guarantees that each tx has a private call, a nested private call, a public call, and a nested public call, as well as an emitted private note, an unencrypted log, and public storage read and write.

This benchmark source data is available in JSON format on S3 here.

I just followed the existing pattern really. I did wonder if we might add a couple more tests at which point it maybe makes sense.

The way you have to pass those env vars through like that is really annoying.
